Uses

  • Injection and tumbling brines, pickling and marinades for cooked ham and meat pieces.
  • Has increased solubility and functionality.
  • Significantly increase yield and WHC.
  • Prevents drip and moisture loss during shelf life.
  • Stabilizes color, taste and appearance.
  • Prevents nutritional loss during shelf life and microbial growth.

Product information

  • EEC classification: E 450, E451.
  • Appearance: White free flowing granular powder.
  • Shelf life: 24 months in original package, under dry and cool storage conditions.
  • Maximum stack height: 2 pallets.

Recommended dosage

  • An optimum will be reached with 0.3  to 0.5 % (300-500g/100kg) M 254, calculated in the end product.
