  • Injection and tumbling ice cold brines, pickling brines and marinades for coked, cured and uncured meat. All types of sausages, meat emulsions, comminuted meat and meat pre blends.
  • Significantly increases yield and water holding capacity.
  • Stabilizes color, taste and appearance.
  • Quickly dissolved in chilled water.
  • Prevents drip and moisture loss during shelf life.
  • Prevents microbial growth.

Recommended dosage

  • An optimum will be reached with 0.3 to 0.5% (300-500g/100 kg) M287 calculated in the end product.
